Nothing beats homemade fresh pasta sauce. Bring a piece of Italy into your home using this easy-to-follow recipe featuring a spicy and flavorful Arrabbiata sauce. Arrabbiata literally means "angry" in Italian; the name of the sauce refers to the spiciness of the chili peppers.
INGREDIENTS
FOR THE SAUCE:
4 tbsp Biona Extra Virgin Olive Oil
4 or 5 cloves fresh garlic
Small bunch of fresh parsley, finely chopped
1 x 400g tin of Biona chopped tomatoes
1-2 fresh chilies, finely chopped
1 tsp of sea salt
3 or 4 large leaves of fresh basil, more to add to each plate, if desired
METHOD
- Pour a tablespoon of Biona Extra Virgin Olive Oil into a large sauté pan over medium-high heat. Crush the garlic and add it to the oil, add the chopped chilies.
- Sauté the garlic and chili until it just starts to brown, then add the parsley.
- Turn the heat up to high. Now add the Biona tinned tomatoes. Stir with a wooden spoon and lower the heat.
- Add the salt and continue to simmer at a fast pace, and stir often.
- The sauce will thicken quickly and should be ready in about 5 to 7 minutes.
- Turn off the heat and add the fresh basil. Add to the favorite cooked pasta and enjoy!
